Everyone loves a good dessert. The buttery, chocolaty goodness that makes a warm cookie so welcoming, the first bite into a red velvet cupcake. There’s nothing like a good sugar spike to start the day, or keep it going. I don’t like to admit it very often, but when my sweet tooth strikes, sometimes a trip to the bakery is the only way to get my sugar fix.
Welcome to Hayley Cakes & Cookies, formally Rise and Shine Bakery off 2222 in front of the River Place neighborhood. Area residents have patronized the eatery for over 7 years, which closed its doors for extensive remodeling beginning Dec. 24.
The formal re-opening was January 2, and in addition to the fresh feel of the look, new owner Hayley Callaway introduced an updated menu, adding several popular sweets to those already available. Lunch at Hayley’s still consists of light sandwiches and salads. And of course, there will be cookies. Lots and lots of cookies.
In addition to the renewed layout, a new display case was installed to home such delectable goodies as the Brookie, a delicious brownie and cookie-based concoction, cupcakes, gluten-free macaroons and more. Hayley focuses on colorful custom cakes and cookie designs, and one peek in the cookie case had me reeling over the dashing designs of their many decorated sugar cookies.
After taking over the bakery from founder Michelle Brull in July of last year, the eatery had its fair share of difficulty in dealing with the changes stemming from a new owner and new business model. But after several weeks since opening the shop seems to be doing well as the business moves forward, this time focusing more on baked goods and catering.
As a part of some of the new changes, Hayley Cakes & Cookies will be closed on Sundays. However, most menu items are still available, including coffees, chai teas, cinnamon rolls and a smattering of muffins.
