Chisos Grill: Changing Things Up at the New Location

With the move to the west end of the Hill Country Galleria near Whole Foods, the fine folks behind Chisos Grill saw the opportunity to change up the menu and setting of the southwestern flair restaurant.

“I felt like we needed to make a step up. The one thing I heard from guests is they wanted something to keep them from going to downtown on a regular basis. Between this and Cafe Blue, we give them a more trendy upscale environment without having to go to the Domain or South Congress,” said Chad Jones, Chisos Co-owner and Executive Chef.

Chad also said they were eyeing the old Zinger’s Grill location for a while. It wasn’t long after the announcement of Hill Country Galleria Improvements for 2016 that the offer was made to make room for H&M and move Chisos to a more centralized dining area.

As part of the new Chisos location, you can enjoy a Live Oak shaded outdoor patio and a contemporary interior with a warm, southwestern vibe.

For longtime customers — given the new location — it still feels the right amount of Lake Travis casual.

New menu with the old favorites

A big addition to the new location is a mesquite-burning grill. You’ll see a select choice of different steak cuts, chops, fish, and shrimp that will be available as part of an updated menu Chad hopes to debut in late April.

And with some of the best tastes coming from the grill, Chad’s developing a cold smoke chimichurri, serrano butter, and a few other sauces you’ll be able to pair with your grilled item.

Some of the more popular entrees that will remain on the new menu include the grilled salmon alpine salad, green chile cheeseburger, and the Nuevo Diablo.

“We are not a steakhouse, Tex-Mex, or seafood. We are a little bit of all of the above,” Chad said.

Many items on the menu are gluten free including the Nuevo Diablo’s bacon wrapped shrimp with jalapeno hollandaise and chipotle cream. They also locally source items and ingredients whenever possible including Amy’s Ice Creams and bread from New World Bakery in Kyle.

For dessert, Chisos Grill will have new cheesecake and lemon pie recipes along with Mexican chocolate flan and tres leches with berries.

Happy Hour specials run Monday to Friday from 3pm to 6:30pm with a $5 cocktail of the day, $2 off 20 ounce drafts, $2 off wine by the glass, and 25% off bottles of wine. On weekdays from 5pm to 6:30pm, all appetizers are half-off.

As Chad has been telling many of his longtime customers, none of the menu prices have increased since the move and he does not foresee them changing.
