Editor’s note: As I was getting ready to publish today’s scheduled post about the Austin Burrito Company, I came across this message from the Walker Family that was posted on the company Facebook Page yesterday. Please do what you can to help support this local business and Lake Travis family. Here’s the message from the Walker Family:  

Honesty has since the beginning been a key tenet of the Austin Burrito Company. This is why we’re reaching out to you all this early this morning.

Simply put, we need your help.

Starting a new and independent restaurant is incredibly hard. It’s required years of hard work and sleepless nights (such as this one) to open our doors.

It’s also very expensive. Our family’s entire savings has gone into this effort. Everything.

And now, just weeks after opening, we’ve encountered a serious challenge.

Adulthood may toss a few favorite childhood staples: bubblegum flavored ice cream, monkey bars and Pop Rocks.

But there is a quintessential childhood fantasy that follows many into double digits, and is classic and timeless as Peter Pan — treehouses.

Growing up, I always wanted a treehouse.

The closest I came was my grandparent’s concrete storm cellar. When I wanted to hide from the world, my refuge was on top of its concrete domed roof.

With the assistance of a neighboring kumquat tree, I would climb its branches, step onto the cellar’s roof.

The world never bothered me up there. Time was still and allowed me to get lost in an imaginative world.

Life was easy when my feet were 30 feet off the ground.

The gas-fired barrel roaster rumbles along for a few minutes, then a crackle sounds. It’s like a dry twig snapping. Scott Bogart checks a temperature gauge.

He nods, twists a handle, and pulls out a hot sample.

The coffee beans in the sample tube are turning from the delicate green of new lettuce to a shade like straw.
